Hbs204 week 11 the gi system 3. Nutrients can be loosely categorised as: macronutrients carbohydrates, proteins and fats, micronutrients vitamins and minerals (electrolytes, water. Digestion mechanical: the breakdown of large pieces of food into slush (chyme) and chemical: break down od complex molecules into simple molecules. Absorption the absorption of these simple molecules and water which pass from the lumen of the gi tract into the blood or lymph via mucosal cells. The physical breakdown of large food particles into small food particles, this results in the production of a soupy slush known as chyme. This takes place in the mouth (chewing), stomach (mixing and churning of contents) and small intestine (small amount due to segmentation contractions) The chemical breakdown of complex molecules into simple molecules, as the small particles of food can still be quite large and the epithelial cells in the gi tract are not able to absorb large molecules, only small simple ones.
