In the 1920"s, it took 18 weeks for a chicken to reach market weight. In the 1950"s, it took 2. 3 years for cattle to reach market weight. 100 years ago, hens laid roughly 80 eggs a year. This has now increased more than threefold to 272 eggs a year. Our food system is analogous to an hourglass with farmers ate the top and consumers at the bottom. For food to get to the consumers, it must first pass through the narrow part of the hourglass (i. e. the small number of agribusiness companies that control our food) Defined as the sum total of all operations involved in the manufacture and distribution of farm supplies; production operations on the farm; storage, processing and distribution of farm commodities and products made from them. Agribusiness tends to function more as a system than as a n intuition. In general, canadian farmers are under-subsidized compared to american and european farmers.
