A pathogen is an organism that can cause disease. Pathogenic organisms that make you sick or can kill you: bacteria, toxin producing molds, viruses, parasites. Found in farm environments where raw commodities are grown. Organisms enter the body, multiply in intestine and secrete toxins that irritate/destroy intestinal lining = cramps or diarrhea fever. Incubation time normally greater than 6 hours, duration: a few days. No time needed for multiplication incubation time is short (less than 4 hours) and duration only hours. Fever not associated, vomiting and nausea is common. Botulism: double vision, dizziness and muscular weakness paralysis (breathing) Botulinal toxin is a highly potent neurotoxin that blocks acetylcholine in nerve receptors. E. coli h7 in burgers, salmonella in ice cream. Outbreak: 2+ people develop a similar illness after eating a common food: toxin-producing foods. Mycotoxins toxic metabolites produced by molds and fungi (grains and nuts exposed to moisture) Ergotism casual relationship between mycotoxin ingested and a particular disease.
