Document Summary

When things condense and bonds are made, heat is given off. When you need to break bonds, you require heat. Why is it important to be at the phase boundary: at the phase boundary, we are at equilibrim between the gas phase (steam) and liquid phase of water. When you are giving off heat of taking off heat, the temperature won"t increase, before you are changing phases: steam sterilization- requires being at the phase boundary. Where, whenever we havd dh of sterilization of condensation, the temp stays constant. Condensation creates a vaccum, in which more steam comes in and condenses. Most common and effective for of sterilization. In cases, where things are sensitive to water, we need to use dry heat. In this case, heat needs to be absorbed. So, the heat penetration is not like steam. In dry heat, it is much slower, you depend on heat transfer (absorbance).
