Acute viral anosmia have to do with in ammation of the nasal epithelium. Persisting post-viral anosmia have to do with damage of the nasal epithelium. Accounts for a lot of the general anosmias in the adult population. Taste buds are collections of taste receptor cells embedded in tongue tissues. Have a brous structure at the end of the cell, called microvilli, which increase the surface area of the cell for taste receptor proteins. Gustatory stem cells allow for regular replacement of receptor cells. Taste receptor cells interact with microvilli to release neurotransmitters + transmit signals into the brain. Nerve bers from the cells enter the brain in two major branches: Thalamus, insula, and somatosensory cortex: associated with taste identi cation (e. g. sweet vs. salty) Amygdala, hypothalamus: associated with emotional response (e. g. yuck vs. yum ) 5 categories of taste, each associated w di erent receptors: salt, sour, bitter, sweet, umami. Salt: composed of nacl, with na+ mediating the salty taste.
