SAR HS 369 Lecture Notes - Lecture 1: Lipid Bilayer, Blind Experiment, Collagen
Document Summary
Component of food required by an organism to maintain life and allow growth & reproduction. Carbohydrates, proteins, lipids, vitamins, minerals, dietary fiber, and fluids are all nutrients you need to take every day. Phospholipids are partly soluble and insoluble and acts as an emulsifier. Eating more lecithin doesn"t lessen the heart fatty plaques any more if you eat it in excess. Eggs have a lot of lecithin but you won"t absorb the lecithin from food (it will get digested) Some deficiency symptom must be present then when you add back the nutrient, the deficiency is rectified. This is how we establish if something is a nutrient for humans. Promote health, but not essential to life: ex. Found only in plants (example antioxidants in blueberries) Important in reducing the risk of chronic disease. Are only available from food (not from a pill) Large quantities of phytochemicals actually led to an increase of chronic diseases.
