FDSC 270 Lecture Notes - Lecture 5: Foodborne Illness, Norovirus, Hand Washing
Document Summary
Too small to be seen w/ light. Cannot be cultured outside hosts: contain a single type of nucleic acid (either dna or rna) Ligands bind to receptor proteins on the host cell (very specific) Have a protein coat surrounding the nucleic acid. May have an envelope covered by spikes (cho and protein) which attach the virus to the host cell. Dont grow on food bc they need a living host found in the gi tract of the human body. Multiple inside living cells by using the synthesizing machinery of the cell. Can remain in equilibrium w/ the host and not cause disease for a long time. Transmitted from person person from people food or from people food contact surfaces. Originate from human intestine and contamination occurs from the infected handler or by contact w/ sewage, sludge or pollution. Main food type associated w/ foodborne virus: Fruits and veggies can fertilized w/ sludge or irrigated w/ sewage water.
