Muscle also needs atp to relax, not just to contract. Postmortem, glycolysis is the only way that dead muscle (meat) can make energy. In living tissue, lactic acid is made by glycolysis, and it is removed by the muscle and brought to the liver. When there is an overabundance of lactic acid and it can not be removed quickly, it builds up and causes cramps. In meat, however, when lactic acid builds up in the muscle, the ph will go down. In a piece of meat (dead tissue), muscle is in rigor, so therefore it is contracted and not relaxed. Goes from 7. 4 or 7. 6 to about 5. 6 after lactic acid accumulates. These are the two major proteins that are stuck together n. Myoglobin - a round or globular protein in the muscle that has iron in the center contracted muscle of it.
