Free will: can you act independently, helps explain why there are variations in the norm, ability to go against the institutions, people often go along with norms without thinking about what they are doing. Social change: a lot of sociology deals with things staying the same. Institutions can encourage change, but stay the same themselves. Food as a marker of national identity, nationhood. Nations and nationhood: nation: pretending you have something in common with others because you are form the same place. Food distinctly of that country: essence of the country. Culinary nationalism & cosmopolitanism: cosmopolitan: being comfortable with and knowing people of different cultures, as a nation"s food spreads, there are questions of authenticity. Food tourism: come to our country and see the authentic way to cook and eat our food.
