Complete proteins contain all 8 essential aa, while incomplete proteins do not. Primary structure: sequence of aa in a polypeptide, similar to sequence of letters that spell out a specific word. Secondary structure: corkscrew-like twists or pleated folds formed by hydrogen bonds between aa in polypeptide chain.
