Document Summary
Length of growing season & quality influences creation & ripening of the fruit itself, changes composition of the grapes itself: this period is called verasion. Average grape harvest: mid aug late nov: flipped in southern hemisphere. Harvest date is determined by the ripeness of the grape as measured by sugar, acid, & tannin levels. Winemakers also base their decision to pick based on the style of wine they wish to produce. Time picked determines composition of grape & type of wine. In general, the grape wakes up in the spring, turns into chutes, then flowers are pollinated, then turn into grapes, when grape ripens and falls on the ground, seeds replant. Leaves convert sunshine into fuel for plant, use solar energy to make grapes builder. Hard green pulp with organic acid becomes bigger and gains more sugar. Grapes undergo many changes besides getting bigger & gaining more sugar: this period is called veraison.
