Increases surface area of food makes salivary enzymes more efficient. Ingestion/mouth | food is mechanically broken down by mastication/chewing. Salivary amylase catalyzes hydrolysis of starch polysaccharides. Salivary lipase - catalyzes hydrolysis of lipids monoglycerides, fatty acids: bolus enters pharynx esophagus | moved by peristalsis (rhythmic contraction of smooth muscle) Epiglottis covers trachea prevents food from entering lungs: gastroesophogeal (cardiac sphincter) stomach | churning continues to breakdown. Stomach"s epithelial lining is folded into pits forms glands with special cells. Cells secrete variety of substances = gastric juice. Chyme slowly squirts into pyloric sphincter small intestine. 4 types of specialized stomach cells: parietal / Lots of mitochondria: chief / zymogenic.
