Stomach - want food to be absorbed slowly, not quickly

Insulin is a hormone that promotes lipogenesis - promote formation of fat and insulin

What slows insulin spike? Complex sugar that requires longer time to be broken down
and contains fiber
Low glycemic load is good, high glycemic load is bad
Trick body to minimize spike - white bread, sugar, sweets, -- to decrease the rate
of diseases
Large intestine houses many bacteria
Releasing the bad chemicals - live inside our bodies - lead to inflammation, immune
system on high alert
Diseases:
Heartburn - getting burning sensation in throat - hydrochloric acid HCl - way we
measure it is to quantify it, pH=2. Take tums
Stomach is equipped to handle HCl, so we always contain it in the stomach
sometimes because changes in organ in the digestive system and the acid leak
upwards to esophagus, and small intestine -- can’t you have bicarbonate

GERD - gastroesophageal reflux disease - acid constantly leaking in the esophagus
The stomach is only equipped to buffer acid, but the rest isn’t

Celiac disease - celiac screw - does damage to the lining of small intestine →
