Lecture 16: non visual system: gustation and olfaction-chemical senses. Food is injected into the oral cavity. Broken down and product is mixed into salvia. Taste is the first indication of the brain that food has been eaten. Tongue moves the food substance and solution around and towards the back of the mouth for digestion. Some solution falls into the troughs of papillae. Taste buds in the side of the papillae troughs respond to the saliva solution. There is not perfect representation of where you tastes certain tastes, it is generally throughout but becomes more dense in those certain areas. Genetic factors and hormones can account for some differences. Variations in taste sensitivity are related to number of fungiform papillao near the tip of tongue. Supertasters have higher sensitivity to all tastes and mouth sensations in general. Sodium chloride is table salt and that"s why we crave it.
