FDSC 300 Lecture Notes - Lecture 16: Ochratoxin A, Vomitoxin, Mycotoxin
Document Summary
Mycotoxins: molds which are filamentous fungi, can develop on food commodities and produce various types of chemical toxins, collectively known as mycotoxins. The main producer of mycotoxins are fungal species belonging to the aspergillus, fusarium and penicillin. Nations food and agriculture organisation estimated that up to 25% of the world"s total crops per year were affected with unacceptable levels of mycotoxins. A mycotoxin-sampling plan is defined by a mycotoxin test procedure and a defined accept/reject limit. Traditional approaches may not be adequate (since population could be heterogeneous) The number of containers samples can vary from one-fourth in small lots (less than 20 metric tons) to the square root of the total number of containers for large (greater than 20 metric tons) lots (fao/who 2001). The whole primary sample must be ground and mixed so that the analytical test portion has the same concentration of toxin as the original sample.
