Used to assimilate working class girls and indigenous girls into notions of how women should behave: only as good as her mistress. Living-in: wages held back, little time off, isolated. Tend to live out (domestic workers: maids replaced by housekeepers, then nannies. 19th c: m-cl women had servants who cooked. Early part of 20th c: many domestic tasks are farmed out. Before 1920, normal for middle class households to send out laundry (industrialized early) Think about diff. in cooking over massive wood stove. Increased pressure to public presentation of food (20th c) Increase expectation of what to provide in terms of food.
