Must be stored and cooked carefully to retain acive nutrients: wrap foods and store in airight container, refrigerate most fruits and vegetables, don"t overcook vegetables; consume some raw. Thiamin destroyed by high heat; ribolavin destroyed by uv light, o2 breaks down vit. Major minerals: calcium, phosphorus, magnesium, potassium, sodium, sulphur, chloride.
