Document Summary

Microbial growth: understanding allows us to control it. How cells divide, how cultures grow, how cell numbers increase and factors that affect growth. These requirements vary due to species and genus. Growth models: useful tools for understanding microbial growth. Two types of microbial growth one for unicellular and one for mycelial. Models created in laboratories using cultures (usually liquid) Growth models may or may not be accurately representing growth in food. On solids cells grow as surface colonies or micro colonies inside. Growth in food causes spoilage and increase in hazard (if pathogens are present) In liquid food cells grow as individuals or clumps: hence why leftovers best eaten within 2-3 days. Unicellular growth applies to single cells undergoing binary fission (bacteria) or budding (yeasts) Budding- a weakness in the cell that causes a bud to form allowing the nucleus to divide and separate.
