Just about any civilization is based on starch. We need enough food and energy in order to fuel the human body. Every geographic environment develops a cuisine that is based primarily on what can be produced locally (true for food and beverages). For the most part if we look at beverages, wine is the essential beverage for southern europe. Beer is essential beverage for northern europe. These 2 are the top principles of alcoholic beverages that are consumed in large volumes. You can"t successfully grow grapes well in northern europe (you can grow barley) Once we have enough food we can discriminate foods (can opt to select foods that are better or higher quality) With affluence comes better food (that"s what people spend their money on): improved diet. Foods that provide us with windows or portals into other worlds. Some we don"t eat and drink but many of the foods we inhale we can also eat and drink.
