Majority of our digestion and absorption occurs in the small intestine. The gall bladder stores bile while the liver produces it. Bile has a hydrophilic head and a hydrophobic tail. Water breaks down the hydrophilic head of the bile into micelles. Protein digestion does not really take place until the stomach where acids such as pepsin act on it. The sugars and amino acids go directly into the blood stream and into the liver after digestion. Lipids are absorbed into the lymphatic system which is then transported to the blood stream after digestion. We want to get nutrients into the centre of the small intestine where there is a capillary system. The wall of the si is surrounded by lumen. The centre of the capillary is the lacteal which is a lymph. The whole wall of the si has villus (villi) on the outer layer.
