Need carbs more than any other fuel. Simple sugars spike sugar in blood very quickly, really quick to digest so they spike blood sugar. Starches are long chains of simple sugar molecules. Fibbers are same as starches but are not able to be broken down. Unrefined carbohydrates: carb sources eaten in their natural form or with minimal processing. Whole grain has germ, bran, and endosperm. Taking the germ and bran (fibber) out and leaving endosperm (sugar/food for grain kernel) gives you refined carbs. Refined carbohydrates: processed carbs, typically have a portion of the grain removed. Can be a source of empty calories. Enrichment: a type of fortification which adds back some, not all, of the nutrients lost in processing.
