A food allergy occurs when your immune system thinks that something you have eaten is a foreign attacker. (typically a protein- gluten, nuts ect) it makes your body launch an attack. May not react harmfully at first exposure: begins the process with production of antibodies. Second exposure: allergens bind to antibodies and cause release of histamine. Gluten protein in wheat, barley, or rye acts an antigen, leads to an immune response which damages villi. Symptoms: abdominal pain, diarrhea, fatigue, malnutrition, weight loss, anemia, osteoporosis, intestinal cancer, and other chronic illnesses.
