FOOD 4070 Lecture Notes - Lecture 3: Hemicellulose, Wine Bottle, Coconut Water
Document Summary
Sept 15 lecture 3 crystalline makes the glass stronger. Glass bottle forming narrow neck (beer: molten material is not stretched that much. Wide mouth (jam: molten material is stretched quite a bit any imperfections will cause obvious unevenness. More susceptible to breakage: have very precise mold distribution, wide mouth = more uniform distribution. Thermal conductivity (new) heat flow due temperature gradient. Mechanical properties: fracture origins at imperfections and tensile stress, tensile stress + stress concentrator = fracture, bottle design will affect. Thermal properties: cooling is more critical, susceptible to thermal shock during heating/cooling cycle of washing, pasteurization, hot fill etc, tested empirically. Cold bottle submerged in hot water is less likely to break then if a hot bottle is submerged in cold water. Why?: hot bottle, more uniform inside the bottle, stress is on inside, cold bottle, tensile is on the inside, low conductivity of glass = easier to break. Marketing: you know which brand is which.
