In order to prepare frozen fresh squeezed orange juice, the oranges are collected, washed, cut/peeled, squeezed to extract the juice, screened to remove the seeds and large particles of pulp, and then frozen in a freezer storage container. However, in order to freeze concentrated orange juice, additional steps are required to obtain the desired product. The first step is to prepare the essence. Fresh orange juice is washed using detergents and scrubbers to prevent contamination. The fresh juice is neither de-oiled, deaerated nor pasteurized. However, it simply passes through fine mesh wires and is processed at a rate of 3 gallons per hour. After stripping the essence and recovering it using a vacuum in order to reduce the boiling point while avoiding its exposure to high temperature, a layer of oil must be separated from the essence. This is where the second step begins; preparing the concentrate.
