Three fatty acids join on to one glycerol molecule by a condensation reaction. Process of adding fatty acids onto the glycerol backbone: esteri cation. Main dietary form- 90% of dietary fats are triglycerides. Major storage form of lipids in the body (adipose tissue)- form lipid droplets. 3 fatty acids (fa) esteri ed to glycerol backbone= tg. In phospholipid there are 2 fatty acids at the sn-1 and sn-2 positions. When digestive lipase remove the sn-1 fatty acid this forms 2-lyso-phospholipid (2- lysopl) which is a strong detergent that aids in fat digestion, but must be converted back to a pl once inside cells. Sn-3 position bonded to a phosphate group and a nitrogen containing base (n-base) Phospholipid units assembled into formation a cell membrane"s basic structure.
