Autoimmune disorder of the small intestine, sensitivity to certain amino acids found in prolamin fraction of wheat barley and rye. Results in damaging to mucosa of small intestine. Reducing absorption surface. (more common in people with type 1 diabetes, thyroid disease, and down syndrome. Takes 12 hours for symptoms to appear after consuming gluten. Diarrhea, failure to thrive, anorexia, gas, weight loss, abdominal distention. Frequently accompanied with iron deficiency anemia, hypoalbuminemia, hypocalcemia, & lactose intolerance. Biopsy of small intestine mucosa is the reference standard (must still be eating gluten) gold.
