Limiting amino acid = it limits protein synthesis: for legumes, methionine is the limiting amino acid, for grains, lysine is the limiting amino acid. By combining beans and rice in the same meal, together it is good as having a complete protein. Have all essential aa in proportions we require for growth + maintenance. Low in at least 1 aa = incomplete protein. Some people say that soy is a complete protein, but it depends on how it is processed.
