HSS 2342 Lecture Notes - Lecture 11: Vitamin K, Health Canada, Folic Acid
Document Summary
Overcompensating one vitamin can be a problem for the other. For example folate can mask a b12 deficiency. Dramatic difference between healthy blood cells and those with exhibit anemia. Can also get choline in your diet. Deficiency can induce damage to liver (fatty liver) Very rare to find someone deficient in either one due to their widespread presence in foods. Rare because b vitamins are often found in groups. Its unlikely to be deficient in just a single one. Trace minerals are just as important we just need a very small amount of them. Body has trouble getting rid of iodine, this means if you consume radioactive iodine it will never leave your body ultimately resulting in cancer. Can consume more idione to flush out radioactive iodine. Can be low in iodine, typically if you live in center of continent and don"t consume foods that come from the coast/sea. Typically found in salt and table salt.
