It means that these aspects of social life are so proponent that during our social interacts become embedded by them: thus, taking something for granted, needs to be understood, e. g. Goffman: in terms of defending your interests (behave, converse etc. ). in order to get most out of the interaction. However, during the interaction some of the behaviours that you are doing are not aware of because they are so embedded in us that we forget they can play out during a social interaction. It is those hidden aspects we are talking about. Someone walks into the bathroom, your behavior changes, glance, do not recognize, try and keep staring in front of you in the mirror instead.
