How many double bonds determines the degree of unsaturated (mono/poly) Def: tendency of polar molecules like water to exclude hydrophobic molecules (non-polar molecules aggregate) Note: micelles are lipid molecules that arrange themselves in a spherical form in aqueous solutions, hydrophobic tails protected from water outside. If phospholipid bilayer didn"t allow molecules to diffuse, those two should have stayed separate on the 2 different poles of the cell.
