Goldfish does ethanol fermentation, about 3 or 4 species of all species that do ethanol fermentation. Because ethanol is lipophilic it can easily pass through gills and into water. Molecules like ethanol, lipid soluble, can escape from blood and into water as blood is flowing into gills. So a large amount of ethanol produced is lost to water. Because ethanol is easily lost, this energy rich molecule, is being mostly lost by the fish into the water. By contrast, lactate, because its charged, it makes it harder to leave through the body, so you keep the energy rich molecule for biosynthesis or to produce atp. Fish are able to tolerate high levels of ethanol in the body, by evolving mechanisms. Goldfish never ever carry out ethanol fermentation in the brain, in the brain they only do lactate fermentation. Most animals avoid producing ethanol because it is toxic to animals.
