Foodborne Hazards and Human Health It must be something I ate Foodborne illnesses Transmissible l Bacteria Escherichia coli Clostridium botulinum (Botulism) Salmonella Listeria monocytogenes (Listeriosis) l Viruses l Parasites Nontransmissible l Shellfish-associated toxins l Color additives l Obesity l Diabetes l Organic food l Bioengineered foods Transmissible Foodborne illnesses Types of food Food that contain high levels of protein can easily be soiled if left at room temperature Meat, ready to eat food, milk, dairy products, unpasteurised fruit and vegetable juices, raw or undercooked eggs, chicken, tuna, potato and macaroni salads, cream filled pastries, fresh produce, spices, chocolate, seafood Careless food handling (how clean is our kitchen?, food standing too long on the room temperature, improper cooking, contaminated cutting boards and kitchen tools wooden boards are better) Symptoms of Food borne illness Diarrhoea, abdominal cramping, fever, vomiting, headache, sometimes blood in the stool Usually last only a day or two sometimes 7-10 days For most people not life threatening May be life threatening to vulnerable populations severe in the young children, the very old and people with certain diseases and conditions such as liver disease, iron disorder, diabetes, cancer. Prevention of Foodborne illnesses In supermarket always check for expiration date, check if product is damaged, if suspicious dont buy it, check colour of meat Safe storage have it in the right place, if food was frozen freeze it Safe food preparation dont contaminate cutting board Keep everything clean dont clutter kitchen, dilute bleach with water, www.notesolution.com
