Lipid self-assembly: lipid and protein behaviour, evidence for the fluid mosaic model. Lecture notes: assembly and dynamics of membrane lipids. Most important feature is this --> spont aggregate in water to bury hydrophobic tails and expose polar heads to water and water surrounds it, inc the packing. It is energetically unfavoured to create your own membrane: hydrophobic effect and van der waals packing, the final structure in water depends on shape of individual lipid molecules. Distinct shapes: 3d shapes are different, the dimensions are the different. Bch210h1 page 1: the cone-shaped does not make a lattice-type --> it makes a ball like below. Cylinder-shaped lipids spontaneously forms lipid bilayers in water --> there is some bending: you cannot have edges exposed however because of water - hydrophobic interactions, so the water forces lipid bilayers into spherical strutures. Forms uni-lamellar vesicles --> only one bilayer. Multi-lamellar vesicles --> multiple bilayers upon each other.
