Seeking other alternatives, farming other crops using that land. Dependent on a small number of processors. Tomatoes that needs to be canned needs to be ripe at the same time. They pick the tomatoes over a span of time, since they can"t pick all the ripe tomatoes at once. Being picked by people, not picked by machines. Very capital intensive, if machinery are used. Workers have to recieve wages, that has to be included in the embedded costs. More greener tomatoes are being picked in order to prevent any damages or over ripening when being transported to the supermarket. A danger of labour exploitation, use of foreign labour.
