Illuminants are composed of different mixtures of wavelengths. What reaches our eye depends on the combination of the reflectance of the surface and the illuminant. Our cones respond to this light; we may end up with two different very colour mixtures from the exact same surface- this is the problem of colour constancy. Changing the illumination changes how the cones respond. Even though the cones respond differently though, we can still say green is green . How: we can make good guesses about the illuminant. These assumptions, as well as prior knowledge combined results in colour constancy: meaning it"s actually a product of visual cortex. Work on animals can provide insight into colour perception. *the mantis shrimp exceeds our colour vision: 16 photoreceptors, 12 for colour vision! Which means in order to understand the real world we need to correct this- this is the problem of space vision.
