Use of electromyography (emg: start at the muscles when we talk about movement and move towards the brain via the spinal cord, you can use emg to measure muscle contractions. If you"re interested in learning about the biceps and triceps, you would put the recording devices on those muscles respectively. Measure their activity while people are moving: many muscles are opposing each other, many muscles are opposing each other. Contracting one muscle and relaxing another when you flex. When you activate one, you relax the other. You have motor neurons that originate from the spinal cord that go to the appropriate muscle that it wants to innervate to cause an appropriate contraction.
