Special Topic #1: Flatulence
-Normal digestion
- Proteins → Nitrogen and Carbon
- Fats → Fatty acids
Complete Carbohydrates → Glucose → CO2 + H2O
Food intake: ie. brussel sprouts, cabbage, beans
Problem: “Incomplete digestion”

Beans Carbohydrates → Indigestible carbohydrates + gas + N2 + CO2 + O2 + CH4 + H2 + H2S*
Bacteria
*H2S = Odor
Odor = Flatulence
Solution #1: Over the Counter medication such as “Beno” (a food enzyme dietary supplement)
→ Ingest “Beno” before eating beans and other gassy foods.
Enzyme = α-galactosidase (⇒the enzyme assists in digestion)
Solution #2: “Toot Trapper” (polyurethane foam pillow with charcoal (to absorb sound)
Solution #3 : Underwear -- charcoal embedded (sanitary) napkins
→ Females: Have higher [H2S] = increased odor
→ Males: Have higher volume

- North Americans have a high fat diet → causes high heart disease.
- North American’s diet consists of land animals (contains stearic acid = ie. found
in steak; helps with arterialsterlosis)
- Alaskan Eskimos, also have a high fat diet, however they have a low heart disease.
- Alaskan Eskimos diet consists of fish/sea animals (contains polyunsaturated fatty
acids (PUFAs))
-Fish eat seaweed (which contains polyunsaturated fatty acids)
Omega-3: C-C double bond is after carbon #3.
