Anatomy and Cell Biology 3319 Lecture Notes - Lecture 16: Ramus Communicans, Taste Bud, Taste Receptor
Lecture 027: Taste and Olfaction
Where do you find white rami communicantes?
● Only where there is sympathetic inputs (where there is lateral horns)
● T1-L2
Where do you find grey rami communicantes?
● All levels of the spinal cord
● Outputs at all levels
Objectives
● Describe the taste receptors
● Identify the nerves responsible for taste
● Identify the sensory nerves supply the tongue
● Describe the pathway of taste perception
● Describe the olfactory receptors
● Describe the pathway of smell perception
Taste
● A special sense
○ Have special receptors to initiate the impulse
● Approximately 10,000 taste buds on the tongue surface
● Most are associated with papillae
○ Papillae covers the anterior surface of the tongue
● 2 different set of tissue fuse together to make the tongue (2 sets of innervation as well).
The terminal sulcus (V shape) divides the 2 sections.
○ Anterior :
■ Circumvallate papilla
● At the terminal sulcus
● Large papilla, has taste buds all along it
■ Foliate papilla
● On the sides of the tongue
● Resemble leaves
● Straight, with grove in between, lined with taste buds
■ Fungiform papilla
● All over time anterior surface of the tongue
● Mushroom-like, lined with taste buds
■ Filiform papilla
● Tapered shaped, points to the back of the mouth
● For wear and tear
● No taste buds associated with these ones
● Cat’s tongue is covered in this type of papilla (why the licks are
rough)

Document Summary
Only where there is sympathetic inputs (where there is lateral horns) Have special receptors to initiate the impulse. Approximately 10,000 taste buds on the tongue surface. Papillae covers the anterior surface of the tongue. 2 different set of tissue fuse together to make the tongue (2 sets of innervation as well). The terminal sulcus (v shape) divides the 2 sections. Large papilla, has taste buds all along it. Straight, with grove in between, lined with taste buds. All over time anterior surface of the tongue. Tapered shaped, points to the back of the mouth. No taste buds associated with these ones. Cat"s tongue is covered in this type of papilla (why the licks are. Food has to be dissolved and make it down into the crevice where the taste buds are. Opening on the surface of the tongue where the dissolved substance can gain access to the taste receptors. Gustatory epithelial cells (2 types in the taste bud)
