CHEM 3050 Lecture Notes - Lecture 41: Ester, Amphiphile, Glycerol
CHEM 3050
Lecture 41
1. Triacyglycerols (triglycerides)
- Has a Glycerol backbone
- They are esterified to 3 fatty acids
- Fatty acid chains may be different
- Provide variety of structure/function
- They CANNOT form bilayers
o NOT part of biological membranes
o Aggregate into globules (very hydrophobic)
where they are stored as energy source
(For different types of lipid structures, look at slide
5 chapter 8)
Amphipathic Lipids
2. Glycerophospholipids
- Glycerol +2 fatty acids + phosphate derivative
- Head group is the phosphate group that is
attached to the lipid
o Phosphate means they are amphipathic
molecules (phosphate group is polar)
