Through careful research, it was learned that the acidity of wines must not only be closely regulated, but also changes depending on the type of wine, red or white. There are several definitions of acids and bases. The most common and easy to understand is the arrhenius definition that defines an acid as anything that increases the concentration of hydronium ions (h3o+) when mixed with water. A base by comparison, is anything that increases the concentration of hydroxide ions (oh ) when mixed with water. The concept of ph is derived from this definition. ph is calculated from the concentration of hydronium ions in the formula log[h3o+] = ph. ph is rated on a scale from 1- 14 with lower numbers being more acidic and higher numbers more basic.
