Alpha linolenic acid and linoleic acid are the essential fatty acids. Saturated fatty acids are solid at room temp and unsaturated fats are liquid at room temp. Cholesterol and saturated fat are from animal sources. A fatty acid with a glycerol is a monoglyceride three fatty acids with a glycerol is a triglycerides: entirely hydrophoblic.
