Each caryopsis has a: protective outer husk, bran covering, starchy endosperm, germ. Husk also called chaff: protects the grain from environmental factors and insects, not usually consumed but processed into fiber supplements, macro biological deterrent. Just beneath the bran is a less fibrous coating containing protein and vitamins and some fat. Both are removed when processing into white flour. Starch in endosperm makes grains (esp whole grains) excellent sources of complex carbohydrates. Basis for all flours (in whole grains, bran and germ are also milled into the flour) Germ or embryo is found at the base of the kernel and accounts for 2. 5% of grain wgt. Very rich in fat, vitamins, minerals, incomplete protein. Most cereal grains are used for flour, pasta, and breakfast cereal. Flour is fine powder made from crushing endosperm of the grain. Bran and germ are also included in whole grain flours. Wheat flour predominately: provides protein structure that facilitates rising in baked goods.
