If a variable is measured on a ratio scale: We can put categories in some logical order, but we don"t know how close together or far apart they are. Plus our scale has a true zero point. We can reasonably say someone with a score of 2 has twice as much as someone with a score of 1. We don"t want to talk about one type of variable as if it were another type of variable. Most psychological variables are actually (roughly) normally distributed. This allows us to do a lot of things statistically that require a normal distribution. More observations on one side of the mean than the other.
