Carbohydrate digestion begins in the mouth with salivary amylase. Need enzyme and water to break down double sugar ( what amylase does here) Smell sight taste = cause brain to stimulate motility. As you swallow you have flap of cartilage slips" over wind pipe so food wont enter lungs epiglottis. 10 in muscular tube esophagus (food in there between 30 sec - 3 min) Propels food through it (peristalsis definition) causes contractions and relaxation thru muscles to propel food through.
