Document Summary

Hft2061 exam 1 notes from the text. Beer is the great family of starch based alcoholic beverages produced without distillation. Today beer is usually brewed from barley malt, with other grains such as rice, corn, wheat, or oats thrown in for reasons of cost, texture, or tradition, and seasoned with hops. The story of beer begins around 10,000 bce, just after the glaciers from the ice age head. The neolithic people of the hill country which is present day kurdistan start to use the grasses as a good source of nutrition, saving the best seeds and replanting year after year. Eventually these grasses turn into barley and wheat and this is where agriculture begins. It appears that beer and wine developed around the same time and same place. The sumerians were the first great civilization of the ancient middle east, and they were very fond of beer.
