Document Summary

Vfas produced by microbial fermentation of organic matter in diet. Microbes ferment feed vfas as waste of fermentation. Microbial fermentation in rumen: lots of vfas produced. Also occurs in hindgut of nonruminants where vfas are produced as well. Important e sources for both r and n. Most important vfas: (1) acetic acid / acetate ch3cooh (2) propionic acid / propionate ch3ch2cooh (3) butyric acid / butyrate ch3ch2ch2cooh. How many vfas produced depends on diet. Primarily forage acetate prominant, less propionate (3:1 a to p ratio) High grain diet acetate still present in high amounts, but more propionate (1:1 a to p ratio) Most acetic acid from microbial fermentation, but acetate can also be produced in liver as byproduct of metabolism. Referred to as endogenous acetate when produced by body itself. Vfas produced in rumen then absorbed across across rumen epithelium (papillae) in acid form.
