Document Summary
Phospholipid: fatty acid #1, fatty acid #2, phosphate containing compound. Emulsifier: hydrophilic end (attracts water, hydrophobic end (attracts lipid, emulsification, emulsifiers organize oil and water into droplets of oil surrounded by water. Another lipid: sterols: have a multi-ringed structure, do not have a glycerol backbone, are a waxy substance, do not readily dissolve in water, cholesterol is a sterol. Functions of cholesterol: essentials component of cell membrane, produced by liver, found only in animal products, forms important hormones, estrogen, testosterone, vitamin d, precursor to bile acids. Digestion of phospholipids and cholesterol: phospholipid, digested by phospholipase enzymes in the wall of the small intestine, cholesterol, broken down to cholesterol and free fatty acids by pancreatic enzyme, Dietary fat absorption- summary cholesterol esterase: monoglycerides and free fatty acids are absorbed through the wall of the small intestine into the absorptive cell. The triglyceride is then formed into a chylomicron and can enter the lymphatic system.
