Fats contribute to the taste and smell of foods. Mostly because of type of food not the saturated fats. Research suggests that omega 3 fatty acids from fish may protect against some chronic diseases. Saturated fats pose more of a risk to cholesterol levels in the blood than cholesterol itself. Saturated fats have a more impact on risk of heart disease than dietary cholesterol. Can cause heart attacks if inflammation in vascular system. 2006 - must be listed on all food labels. But if replaced with lard or something else high in saturated fats, net result is same! Coconut oil - very high in saturated fat. Can be high in fat, but not necessarily high in saturated fat. Diets high in monounsaturated fat = health benefits.
