Functions: synthesis of enzymes and hormones, repair and maintenance, transportation and storage, antibodies, overall biological processes, energy. Protein deficiency is rare in the us. In the us, about 2/3 of dietary protein comes from meat, eggs, poultry, seafood and dairy products. Most of the world relies on plant proteins from beans and legumes. As a country"s economy improves, the proportion of animal foods in the diet tends to increase. Animal products provide sources of protein, vitamins, and minerals: however, they are low in fiber. Plant sources of protein are also a good source of vitamins, minerals and fiber, but in less absorbable forms. Amino acids are the building blocks of protein. Each amino acid contains a central carbon atom bound to a hydrogen atom, an amino group (-nh2), an acid group (cooh) and a side chain.
