Chapter 6 - Lipid Digestion and Absorption, Lipoprotein Transport, Current Fat Intake and
Recommendations
Objectives for today:
Describe the digestion and absorption of dietary lipids including organs, tissues, enzymes,
and other necessary factors involved
Name and define (compositionally) the lipoproteins and their functions
Explain exogenous and endogenous lipid transport
Digestion and absorption of lipids
Mouth - Lingual lipase
Stomach - Gastric lipase
-lipase enzymes
-highly specific
-important for breastfeeding kiddos
Small intestine
-bile
-pancreatic lipase
Hormone (CCK)
Pancreatic lipase and other enzymes
-Chyme enters into the duodenum
-CCK released
-pancreatic secretions (bicarbonate and digestive enzymes) enter the duodenum via the
common bile duct
-bile, produced by the liver and stored in the gall bladder, is secreted into the duodenum
End products of digestion
o 2 Free fatty acids
o 1 Monoglycerides
o Free cholesterol
o Phospholipids

Micelles: a form that we are able to absorb (free fatty acids and monoglycerides)
Inhibit pancreatic lipase: not able to absorb fat, weight loss (diet)
-side effects:
--gas with an oily anal discharge
--loose stools or diarrhea
--more frequent bowel movement
--hard-to-control bowel movement
How do absorbed lipids get into bloodstream?
Chylomicrons: goes to the lymphatic system
-some absorbed nutrients are secreted into the lymphatic system via lacteal in the villi
--fat-soluble nutrients: long chain fatty acids, fat soluble vitamins
--contents of lymphatic system enter circulation at thoracic duct
Transport of Fat in the Bloodstream: because fats are not water soluble, a unique system of fat
transportation is needed
Lipoproteins particles that transport lipid in our circulation
-chylomicrons
-VLDL
-LDL
-HDL
All lipoproteins have proteins that travel with them (called apolipoproteins) to help
solubilize them in the blood
Interior triglycerides, cholesterol esters
Coat phospholipids and protein (apolipoprotein)
